In honor of our carryout grand opening on September 7th, we’ve decided to share the recipe for one of our best-selling hors d’oeuvres with you – Baby Bliss Stuffed Potatoes!

The warm, cheesy, buttery goodness of loaded baked potatoes make them an ultimate comfort food in our book. But let’s be honest –  they’re really not the best finger foods, and they’re not really appropriate for an upscale event.

Enter the Baby Bliss Stuffed Potatoes – our gourmet take on this classic side dish. These bite-sized treats take only an hour to prepare and are sure to be the talk of the town at your next dinner party.

Baby Bliss Stuffed Potatoes

These finger food cousins of the classic baked potato are sure to have your guests – and you! – coming back again and again for more warm, cheesy goodness.
Ingredients
  • 2 small red onions, diced
  • 2 cups bleu cheese
  • 1 cup red wine
  • 3 tbs ground thyme
  • 1/4 cup sugar
  • 1/4 cup water
  • 2 cups bacon bits
  • 1.5 lbs cream cheese
  • 5 lbs red russet potatoes
Instructions
  1. Wash potatoes and cut in half lengthwise
  2. Scoop a small chunk out of the middle of each half using a small scoop. Setting aside scoops in a bowl
  3. Line a pan and roast potato halves for 20-30 minutes at 425 F
  4. In a sauté pan, simmer diced onions, red wine, thyme, salt and pepper, sugar, and water until caramelized and liquid has evaporated
  5. Mix softened cream cheese, blue cheese, bacon bits, and onions, and remaining scoops of potato
  6. Stuff the roasted mini potatoes using a spoon or piping bag
  7. Top with chives if desired
  8. Enjoy!
