I’ll come right out and say it. I’m tired of the cold weather. Absolutely sick of it. I’m sitting at my desk looking out my window and all I see is ice. Luckily its March, which means Spring CAN’T be too far away! This month we will be writing a series of posts regarding Spring and the foods that come into fruition during this crazy month.

As the winter months are coming to a close, we often find ourselves doing more entertaining. It can be hard to get back into the groove of menu planning and coming up with clever ideas for when guests come over. Well, one of the few fruits that becomes available to the mainland is Pineapple. Finally! A fresh fruit! Luckily, pineapple is also rather budget friendly! That leaves more room in the wallet for planning that Spring Break trip (Just let me know where I can pick up my ticket!). By creating a twist on a classic garnish, you can liven up any plate. Incorporate pineapple into your Pico de Gallo and use it to top any protein—particularly pork or seafood. It’s a great way to dress up an otherwise “easy” meal. Simply combine the following ingredients and let them “hang out” together in the fridge for about 20-30 minutes before serving.
1/2 onion diced
1 large tomato seeded and diced
1 1/2 cup diced pineapple
1/2 cup chopped fresh cilantro
1 teaspoon minced Jalapeño
fresh lime juice
Salt to taste
Of course, this Pineapple Pico is also great snacking material!

But, say you’re having some friends over and are looking for a change from the basic cocktail. What about a Pineapple Martini? It’s a fresh (and healthy??) twist on a classic that will surely be the talk of the party! Combine the following in an ice-filled cocktail shaker and garnish with a fresh pineapple wedge and cherry.

1.5 part Pineapple Juice
1 part Vodka
1 Part Orange Liqueur
½ part Fresh Lime Juice
Sugar (to line rim)
Pineapple Wedge (for garnish)

Though slightly on the fruity end of the spectrum, the martini will make you believe you’re on a secluded beach with a mini umbrella and bottle of Coppertone. (Did I mention I’m sick of winter??)
