Fruit Cobbler, Strawberry Shortcakes, and Good Ole Fashioned Banana Pudding. (No, I didn’t look up Cracker Barrel’s dessert list… Though I could have!)

Call us stingy or secretive or whatever, but Chef Callie does not typically share Menu Maker recipes. I begged her to share her Banana Pudding recipe, simply because I can’t go a few days without it. You’re welcome, America. Enjoy!

Callie’s Banana Pudding:

Custard:
7 large egg yolks
1/2 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups half and half
2 teaspoons vanilla extract
3 tablespoons salted butter


3 ripe bananas, sliced
½ package vanilla wafers
Whipped Cream

Custard:
Mix egg yolk, sugar, salt, and cornstarch together in a medium mixing bowl.
On the stove, heat half and half over medium heat until it comes to a boil. Temper half of milk into egg mix. Pour back into sauce pot. Cook on medium heat until it returns to a boil. Whisk the entire time. Pour into stainless steel container and add vanilla and butter, whisk until melted. Cover and refrigerate 2 hours.

Whipped cream:
2 C heavy cream
½ c sugar
1 teaspoon vanilla extract
Put all ingredients in your Mixer, whisk until soft peaks form

Assembly:
Layer of ‘nilla wafers
Bananas
Custard
Whipped cream
Crumble left over vanilla wafers on top
Refrigerate 2 more hours
Devour

Its better when it sits a few hours!
